I made this tonight, it was fast, easy, delicious, nice and sweet and tender. I’ve never made it this way before, always did the egg/breadcrumb route and I’m too tired after work for that so I haven’t had it in years. I was going to do a video response picture of it, but then I ate it instead

I love your video’s Clara and Chris. Our family recipe for Eggplant Parmesan calls for slightly thinner slices then we would salt & press them a while to get some moisture out, then coat them in flour, egg wash & bread crumbs with the cheese mixed in & then fried. Sometime we would add the sauce, cover with more cheese & bake them in a casserole. Or serve them on the plate & add your own sauce. My Grampa, Uncles & My Dad all had gardens at home when I was a kid. Great memories. Thanks.

Never was a fan of eggplant personally but this video makes it look pretty good. Maybe I will reconsider…Can’t wait for the baked apples video! Mmmmm….My mom and I used to make baked apples.

I love Clara’s recipes for Depression cooking. I have noticed some of her recipes include vegetable oil or olive oil. I suspect neither of these were used or even available during the Depression. They probably used Crisco, or more likely Lard. Not healthy, but that was then.

Clara I love your recipes and your stories. You are a big hit and are helping so many in this day and age learn to cook good meals for much cheaper and a lot better for us all then the processed garbage they have in stores now days. Hope to see more vids from you. may I suggest maybe a gravy for biscuits that is easy and cheep. Thanks Clara. ((((hugs))))

I never thought of making it that simple. Of course, that would be just as good as dipping it in flour and frying and much healthier. You also save the baking time, which I always though you had to do. This is easy. Love it. And I am looking forward to you new season.
