Gordon cooks medium rare, his pork, medium, he HATES anything beyond medium. That steak was in there for a good four minutes tops, which would yield a medium rare steak. Watch his fillet of beef with a mushroom gratin, then you'll see true medium rare at it's finest. P.S. This isn't the whole video.
